Chicken Enchiladas Recipe

Chicken Enchiladas RecipeChicken Enchiladas Recipe time: For this month I have an awesome and super easy recipe. It was a breeze to cook and tasted absolutely DELICIOUS! I chose to serve this meal with a side of Mexican rice and black beans, but feel free to make this recipe your own.

Ingredients:

  • 2 Cans of Chicken Meat or Equivalent in fresh cooked chicken(shredded)
  • (1) 8 oz package of Cream Cheese
  • 1 can of Rotel
  • Tortillas
  • 1.5 Cups of Monterey Jack Cheese
  • 1 cup of Heavy Cream
  • Jalapenos, Cilantros, Onions – OPTIONAL TOPPINGS

Instructions:

  1. Preheat oven to 325 degrees
  2. Warm cream cheese and Rotel until cheese is melted
  3. Add chicken, stir, mix in 1/2 cup of Monterey jack
  4. Season mixture to taste with choice of seasonings
  5. Take mixture and fill in tortillas
  6. Oil a baking dish and place tortillas seam side down.   
  7. Drizzle 1 cup heavy cream on top of tortillas
  8. Sprinkle one cup of Monterey jack on top.
  9. Bake at 325 degrees covered with aluminum foil for 30 minutes
  10. Remove foil, then cook for ten more minutes.
  11. Optional – Top with jalapenos, cilantro, onions whatever you want.
  12. Serve and enjoy!
