Ingredients
- 6 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth

Directions
- In a large pot, combine diced potatoes, onion, garlic, and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15–20 minutes).

- Stir in the cream and half of the cheddar cheese until smooth. Season with salt and pepper to taste.
- Serve hot, topped with crumbled bacon, extra cheese, green onions, or a dollop of sour cream.
This creamy potato soup is versatile—you can add carrots, celery, or even cooked sausage for a heartier version. It’s perfect for warming up after outdoor chores, weekend ranch work, or simply enjoying a cozy night by the fire.
