I recently made a FABULOUS and wonderful dinner that was also super easy: Greek meatball gyros with home made tzatziki sauce!
I used elk meat, but you can use lamb, pork, turkey, chicken, or just about any other meat!
First I made the sauce:
  • 1/2 cup finely grated cucumber
  • 1 cup greek yogurt unflavored
  • 1 tablespoon lemon juice
  • 1/2 teaspoon extra virgin olive oil
  • 1 clove grated garlic
  • 1/4 teaspoon sea salt
  • 1 tablespoon chopped dill
  • 1 tablespoon mint (optional)

Grate the cucumber, squish it between paper towels to wring out as much juice as possible, then mix with the remaining ingredients:

  • mix one pound meat
  • 1/4 cup panko bread crumbs
  • 1 tablespoon chopped garlic
  • 1//2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground oregano
  • form into meatballs and set aside in fridge while you prepare the pan

Remaining Directions:

  1. Put enough olive oil in a frying pan to cover the bottom and have about 1/4 inch.
  2. Fry the meatballs, making sure they are brown, carefully turning until they are done.
  3. Slice pita bread in half, smear tzatziki on the inside, place 3 meatballs and add red onions and tomatoes to taste.
