Homemade Noodles RecipeHomemade Noodles: Recipe time!
Have you ever looked at a package of noodles and noticed the ingredient list? There are usually 6 to 8 ingredients listed. My noodle recipe has 4 ingredients!  YEP, that’s it. ZERO preservatives, handmade and they are good!

Ingredients: 

  • 2 cups of all purpose flour
  • 3 large eggs, beaten  (room temperature )
  • 1 teaspoon salt
  • small amount of water to help moisten dough

Directions:

  1. Start on a clean dry surface.
  2. Make a mount out of your flour, then make a well in the middle.
  3. Add your salt.
  4. Pour your eggs in the middle of the well.
  5. Mix by hand until well blended.
  6. You may need to add a tiny bit of water if it is too dry, being careful not to add too much!
  7. Knead dough by hand for 5 to 10 minutes until it forms a nice ball, a little bigger than a softball.
  8. Use a knife to cut in half, then cut one of those in half.
  9.  Use a rolling pin or pasta machine to roll out flat. If using a pasta machine, I make two passes on the #1 setting, then fold over and run a pass through each of #2, #3 and #4.  You will have to fold it over several times to keep the length manageable. If you have a pasta machine, run the dough through the cutter side. If you don’t have a pasta machine, simply cut with a knife into strips the width you would like.  (I prefer egg noodle width as that is the size I use for stroganoff and soups.)
  10. Next you will need to hang the pasta to dry. I have a pasta rack, or you can hang from dowel rods or even cardboard covered coat hangers. Grandma Jurica used to hang her pasta noodles outside on the clothesline!
  11. After they dry, package into zip lock bags and use fresh or within 3 or 4 days, or they freeze really well for several months.
