Hot Link Creamy Pasta Recipe
Hot Link Creamy Pasta Recipe: This is a GOOD one, and it’s one pot, and only takes a handful of ingredients!
Ingredients:
- 1 pound hot link sausage sliced into rounds, about ½ inch thick
- ½ large onion chopped
- ½ green bell pepper, sliced or chopped
- ½ orange, red or yellow bell pepper, sliced, or chopped
- 1 can fire roasted chopped tomatoes
- 1 cup sliced fresh mushrooms
- 2 cloves of chopped garlic
- 1 ½ cup chicken broth
- 1 pound package of penne pasta (any pasta will do, really
- 8 ounces cream cheese, cut into pieces
- Salt and pepper to taste
- Fresh chopped parsley for garnish – I used dehydrated parsley and it was fine!
- Optional red pepper flakes, fresh grated parm or romano cheese to toppings
Instructions:
- Heat two tablespoons oil in a deep sided skillet.
- Sautee hot links until cooked through.
- Remove from skillet and set aside, leaving the drippings and oil in the skillet.
- Sautee onions, bell peppers, and garlic until softened.
- Add mushrooms, tomatoes with the juice from the can, chicken broth, and pasta, heat to a boil, stirring to prevent sticking.
- Once pasta is al dente, add the pieces of cream cheese, and stir until everything is mixed thoroughly and the cream cheese is melted.
- Reduce heat to low, and cover, continue to cook until pasta is cooked to your liking, about 5 minutes.
- Stir, and serve in a bowl with the toppings of your choice.
