Veggie & Chicken Skillet Dinner This easy one-pan Veggie & Chicken Skillet Dinner Recipe is packed with August produce. It’s perfect for using up garden surplus or highlighting what’s fresh at your local farm stand. It’s quick, hearty, and bursting with Lone Star flavor.

Ingredients:

  • 2 chicken breasts, diced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 bell pepper (any color), chopped
  • 1 cup cherry tomatoes, halved
  • ½ red onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: fresh basil or shredded cheddar

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken, season with salt, pepper, paprika, and cumin. Cook until browned and cooked through, about 8–10 minutes.
  3. Add garlic, onion, and bell pepper. Sauté for 2 minutes.
  4. Stir in squash, zucchini, and cherry tomatoes. Cook until veggies are tender (5–7 minutes).
  5. Top with fresh basil or cheese, if desired. Serve hot!
